Apple Rabdi is one of the most easy and delicious dessert.
It can be served hot or cold. But I like to enjoy it chilled, after my meal. It
is a big hit for parties or on any occasion you want to celebrate.

Ingredients:
- 1litre Whole Milk (approx. quarter gallon)
- 2 medium size apple
- ¼ cup Sugar (If apples are sweet you may require less sugar)
- 4 cardamom/Elaichi powder
- 10 cashew nut, chopped
- 10-15 raisin
- 7-8 Pistachio, chopped
- Pour milk in a thick base pan or a wok/kadhai and put it on the stove. Once the milk comes to boil, stir it with the help of spoon. Reduce the flame and boil till the level of milk decreases.
- Meanwhile wash, peel
and grate the apple, removing the seeds and the stalk of it. Taste the apple,
if it is sweet, then reduce the quantity of sugar to be added.
- Take grated apple in another pan and turn on the heat. Cook for 5-7 minute. Then, add sugar accordingly. I required just 2-3 tablespoon as the apple was sweet enough.
- Keep stirring the milk using the spoon regularly to avoid it from sticking to the base of the wok.
- Saute the apple and sugar with really light hands as we don’t want to break the strands of the grated apple.
- After 5-6 minute or once the sugar has melted and the syrup is dried, turn off the heat.
- By this time the milk is reduced enough. Turn of the heat.
- Let the apple mix cool for a while. Later you can mix it to the reduced milk, along with cardamom powder, cashew nut and pistachio.
- Mix it well and once completely cool, you can chill it in refrigerator.
Tips:
- If you want to serve it hot, just add a pinch of baking soda to the boiling milk and mix well, and then add cooked grated apples. Now keep stirring till it comes to boil for 2 more minutes. Add nuts and cardamom powder. Apple rabdi is ready to serve.
- You can also relish this apple rabdi without adding extra sugar to it, as it has enough sweetness of apples and reduced milk.
