Spring Onion besan recipe/ Hari pyaj ka besan

This is a famous Maharashtrian recipe which is called in Marathi as ‘peeth perun kandyachi paat’. The name can be a bit tongue twister for those who cannot speak the language. Spring onion is also known with other names as scallions or green onions. In Marathi it is called kanda paat or kandyachi paat and in hindi hari pyaj.
This spring onion recipe is the easiest to make. All the ingredients are easily available in the Indian pantry.

Step by step Spring onion besan recipe:
  1. Dry roast ¾ cup gram flour on low flame in a pan until nice aroma comes; it may take 3-4 minutes. Keep stirring continuously to avoid burning.
  2. Take oil in a pan. Add mustard seeds and cumin seeds.
  3. When they splutter, add 2 tsp. of ginger, garlic and green chili paste (grind 2 small garlic cloves, 1 inch ginger and 1 green chili).
  4. Now add chopped spring onions and saute for a minute.
  5. Add 1 chopped tomato and salt as required. Continue to saute until tomatoes are soft.
  6. Add ¼ tsp turmeric powder, ½ tsp red chili powder and ½ tsp coriander powder and continue to sauté.
  7. Add roasted gram flour and mix well.
  8. Sprinkle 2-3 tbsp. water. Cover and cook on low heat for 5 minutes. Sprinkle more water if the mixture dries up while cooking.
  9. Add remaining spring onion greens and mix. Cover and cook for another 5 minutes. Remember to keep stirring in between and sprinkle water as and when required.
  10. Serve hot.

INGREDIENTS (measuring cup used, 1 cup=237 ml)
  • ¾ cup gram flour/ besan
  • 8-10 spring onions
  • 3 tbsp. Oil
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 2 tsp. ginger garlic paste
  • 1 green chili
  • 1 large tomato, chopped
  • ¼ tsp turmeric powder
  • ½ tsp red chili powder
  • ½ tsp coriander powder
  • Salt to taste
DIRECTION
  1. Wash the spring onions in running water thoroughly and chop them. Keep the greens and onions separate.

  3. Take oil in a pan. Add mustard seeds and cumin seeds.

  5. Now add spring onions and saute for a minute. Keep some onion for the end (only the green portion of spring onion).
  6. Add tomato and salt and continue to saute until tomatoes are soft.
  7. Add turmeric powder, red chili powder and coriander powder. Continue to sauté.
  8. Add gram flour and mix well.
  9. Sprinkle 2-3 tbsp. water. Cover and cook on low heat for 5 minutes. Sprinkle more water if the mixture dries up while cooking.
