Easy
veg pualo cooked in pressure cooker with step by step photos.
Here I am sharing the way I make veg pulao at home. I sometimes make pulao in a
pressure cooker using this recipe or sometimes in a pot. When I don’t have time
to do elaborate cooking, I use pressure cooker for pulao.
This
a good option to make pulao when you have cook food on a short notice or in a
quick time. One thing needs to be taken care of is, different types of rice will cook at different
timings. Since I use the same brand of basmati rice, I know how much time the
grains take to cook. It is always better to soak the rice first. The proportion
I use for rice to water is 1:2.
While
cooking the pulao, after adding the drained rice, stir it with rest of the
ingredients well, so that the oil coats each rice grain. I usually pressure
cook on a high flame for 2 whistles. Let the pressure inside the cooker drop,
as the rice needs some standing time, when the cooking process is still on.
Then I gently fluff the rice before serving.
In
this recipe I have added the vegetables available at home like green peas,
carrots, french beans, potatoes and onions. You can add veggies of your choice
to the pulao like mushrooms, capsicum /bell pepper and even tomatoes.
Step by step quick
veg pulao recipe below:
- Rinse the basmati rice and soak the rice for 20-30 minutes.
- Meanwhile, you can chop all the vegies. Then heat 2 tbsp. of oil/ghee in a cooker and add the whole spices- cumin seeds, tej patta, cinamom stick, clove, green cardamom, whole black pepper. Saute it for few seconds till the spices become aromatic.
- Add ¼ cup chopped onion, stir and saute on a low flame till the onion become golden.
- Then add ginger + garlic + green chili paste. Stir and saute till the raw aroma of the ginger garlic goes away. About 15 seconds.
- Then add all the chopped veggies and saute for 2-3 minutes on a low flame.
- Add the spice powders- turmeric, red chili and garam masala. Mix well with all the veggies.
- Drain water from the soaked basmati rice after 30 minutes.
- Add
drained basmati rice in the pressure cooker.
- Saute gently for 2-3 minutes till the oil/ghee has coated the rice grains evenly.
- Pour about 2 cups of water and salt. Stir the veg pulao very gently.
- Cover the lid and pressure cook the veg pulo for 2-3 whistles on a medium to high flame. 2 whistles will make the pulao fluffy and nice. If you like it softer in texture then cook till 3 whistles.
- When the pressure cooker settles down, remove the lid and gently fluff the rice.
- Serve the veg pulo garnished with fried onions, cashews and mint or coriander leaves. Veg pulao goes well with a raita like boondi raita, plain raita or mix veg raita. Even a side thin curry or kadhi or spiced butter milk or chaas goes well.
- You have a comforting meal ready.
