Bread Kachori Recipe

Kachori is a famous snack of India. No snack can take the place of hot kachoris served with a cup of tea. Here I am making a different type of kachori, bread kachori with the stuffing of corn and paneer.
This is the most delicious experimental recipe which is great as a tea time snack and is wonderful to have it as well..you will absolutely love this.
This kachoris can be served as starter or as breakfast. I am sure you will love to eat this hot kachoris especially in rainy season J

This tempting and crusty kachoris made with bread will surprise your guest and will be loved by all.
So here is the recipe, do try this for your family they will absolutely love this.

Step by step recipe of Bread kachori:

For the dough-
  1. Take a mixing bowl and add, ¼ cup Semolina, ¼ cup maida (all-purpose flour), salt to taste and a large pinch of soda bicarb.
  2. Mix it and add 2 tbsp. Oil.
  3. Make small pieces of the bread slices and add it to the flours. Pour in the milk. Combine everything very well.
  4. Combine everything well and knead to smooth and stiff dough. Cover and keep aside.
For stuffing-
  1. Roughly grind ½ cup corn in the grinder just once. Make sure it doesn’t become paste. Take it in a bowl. Add ½ cup crumbled paneer to it.
  2. Then add 2-3 tbsp. bread crumbs and 1 tbsp. corn flour to it. Add finely chopped green chili.
  3. Add 2 tbsp. chopped coriander leaves to it.
  4. Add salt to taste and mix everything well. Keep it aside.
Make bread kachori-
  1. Take a small portion of dough and roll out each portion into small puris or you can flatten it with your hands. Place 1-2 tsp of the stuffing in the center.
  2. Gather the edges towards the center like potli.
  3. Seal the edges like kachori. As shown in the picture below. Repeat the same with the remaining dough and keep aside.
  4. Heat the oil in a kadhai and shallow fry the kachoris on medium flame till it become light brown in color and crisp from all the sides.
  5. Drain on absorbant paper and serve hot.

A different way of making kachori using bread stuffed with paneer and corn.

INGREDIENTS (measuring cup used, 1 cup=237 ml)
For dough-
  • ¼ cup Semolina/suji
  • ¼ cup All-purpose flour/ maida
  • Large pinch of soda bicarb
  • Salt to taste
  • 2 tbsp. Oil
  • 5-6 bread slices
  • ½ cup milk
For stuffing-
  1. ½ cup boiled corn
  2. ½ cup Paneer (crumbled)
  3. 1 tbsp. corn flour
  4. 3 tbsp. bread crumbs
  5. 2 tbsp. coriander leaves, finely chopped
  6. 2-3 green chilies, finely chopped
  7. Salt to taste
  8. Oil to shallow fry
DIRECTION
For the dough-
  1. Combine semolina, maida (all-purpose flour), salt and soda bicarb.
  2. Add the coarsely ground bread (roughly break bread into small pieces)and oil
  3. Pour in the milk and mix well.
  4. Knead to smooth and stiff dough.
  5. Cover and keep aside.
For stuffing-
  1. First give one whizz to the corn in blender. Make sure you don’t make a fine paste here. Take it in a bowl. Add crumbled paneer to it.
  2. Then add bread crumbs and corn flour to it. Adding bread crumbs is absolutely optional to the stuffing. It is used to soak up moisture of corn.
  3. Add green chili and chopped coriander leaves to it.
  4. Add salt to taste and mix everything well. Keep it aside.
Make bread kachori-
  1. Take a small portion of dough and roll out each portion into small puris or you can flatten it with your hands.
  2. Place 1-2 tsp of the stuffing in the center, gather the edges towards the center like potli. Apply little water around the edges and seal the edges like kachori. As shown in the picture below. Repeat the same with the remaining dough and keep aside.
  3. Heat the oil in a kadhai and shallow fry the kachoris on medium flame till it become light brown in color and crisp from all the sides.
  4. Drain on absorbent paper.
NOTES
  • For stuffing you ca use potatoes, green peas, mixed vegetables or tuver dana (surti lilva).
  • Fry the kachoris on medium flame, as bread cooks really fast, make sure your pan is medium hot while dropping these kachoris. Fry them till crisp.
SERVING SUGGESTION
  • Serve hot with chutney or tomato ketchup or any dip of your choice. You will absolutely love thisJ.
  • These bread kachoris can also be served with soup or with any juice.
