Sweet Corn Soup Recipe

Sweet corn soup is a Chinese based soup recipe prepared with corn and other vegetables. This is a very easy and flavored soup recipe. In this recipe, I tried to recreate the restaurant taste and the result was very well, as it had thumbs up from hubby J.

Step by step Sweetcorn soup recipe below:
  1. Rinse all the vegetables and chop them finely.
  2. Boil water in a container.
  3. Meanwhile, take ½ tsp butter in another pan and heat it. Sauté ¼ cup finely chopped beans and ¼ cup finely chopped carrots. It may take 1-2 minutes.
  4. When the water starts boiling add these vegetables to it. Allow the vegetables to get cooked. Wait till they turn soft yet crunchy enough to bite.
  5. If you are using frozen corn kernels, add them little later as it will not take longer to cook.
  6. Meanwhile mix 2 tbsp. cornstarch in 2-3 tbsp. water. It should be without any lumps and keep it ready.
  7. Once the water is reduced a little and veggies have turned soft, add the cornstarch mixture. Stir once. The soup will start to thicken slowly after corn flour mixture is added.
  8. At this stage add sugar and salt and give a quick stir.
  9. Let it simmer for 3 minutes and add pepper powder.
  10. Finally garnish with spring onions and switch off the heat.
  11. Serve hot.

Sweetcorn vegetable soup recipe

INGREDIENTS (measuring cup used, 1 cup=240 ml)
  • ½ cup sweetcorn kernels
  • ¼ cup carrot, finely chopped
  • ¼ cup beans, finely chopped
  • 2.5 cups water
  • 2 tsp corn flour/ cornstarch
  • ½ tsp Black/ white pepper
  • ½ tsp sugar
  • Salt to taste
  • 2 tbsp. spring onion greens, finely chopped

TIPS

  • If you get white pepper, then use it which tastes best.
  • Adjust corn starch according to the desired thickness or consistency you want your soup to be.
  • Sautéing the veggies before boiling, is purely optional, but it will give nice flavor to the soup so I always do it.

SERVING SUGGESTION
Garnished with finely chopped spring onion, some pepper powder and serve piping hot Sweetcorn Soup.
