Mix Vegetable Raita Recipe, How to make Vegetable Raita

This is a healthy and tasty way to indulge veggies in your diet. Raita is one such recipe that accompanies and compliments Indian meals in taste, flavor and nutrition.

Step by step mix vegetable raita recipe: 
  1. Beat the yogurt or curd until smooth
  2. Add the chopped vegetables
  3. Combine all the ingredients well
  4. Add the spices and salt and mix well
  5. The Mix Vegetable raita is ready
There are quite a number of variations to make this yogurt based recipe. The most popular among them are cucumber raita and boondi raita.

A must have side dish with Indian meal

SERVES: 3-4

INGREDIENTS (measuring cup used, 1 cup=240 ml)
  • 1 cup yogurt
  • ¼ cup carrot, peeled and chopped finely
  • ¼ cup bell pepper (red/ orange/yellow/green), finely chopped
  • ¼ cup, tomato, finely chopped
  • ¼ cup onion, finely chopped (optional)
  • ¼ cup cucumber, peeled and finely chopped
  • ½ tsp roasted cumin powder
  • ¼ tsp black pepper powder
  • Black salt/rock salt as required
DIRECTION
Beat the yogurt or curd until smooth
Add the chopped vegetables and mix with the yogurt.
Add the spices and salt and mix well.

TIPS
  • Making raita is very easy and quick. Just chop some vegetables or fruits and add it to the yogurt. There is not set recipe as such for making raita. The proportion of vegies and yogurt can always be altered as per one’s choice. Care must be taken while seasoning the raita with spice powders. There has to be a balance of taste in the final dish.
  • The vegies can be of your choice. You can add veggies like steamed cauliflower or broccoli, boiled potatoes, blanched French beans or cooked corn kernels or cabbage to make this raita.
SERVING   SUGGESTION
Serve the Mix Vegetable raita at room temperature or chilled as a side dish.
Raita are always a good accompaniment for pulao, biryani or most rice dishes. They can also be served with parathas as well.
