Moong Sprout Salad Recipe, How to make Sprout Salad

Sprout moong salad is a healthy low calorie recipe. I often make this salad for breakfast or as a side dish with my meal.
Moong sprouts are readily available at stores. But it is always better and healthy to sprout moong at home. Please check my post for detailed steps on how to sprout moongI will soon update mixed bean sprouts method.
Once the sprouted moong beans are ready then you can follow this quick salad recipe which can be easily favored as per taste. You can innovatively make this salad spicy, crunchy, tangy or sweet. They are often added in some Indian recipes like pani puri, bhel puri, usal recipe or dahi papdi chaat.

An easy delicious and healthy recipe for people who does not have much time for cooking or who does not know much about cooking specially students especially those staying in hostel or dorm or staying away from family for work or studies. 

In this salad recipe, we need to steam or boil the sprouts till half cooked. If you want the moong sprouts to be soft, then you can even boil till they are completely cooked. The water which we use to boil sprouts is generally discarded but that water can be used for cooking.
Step by step moong sprout salad recipe below:
  1. Rinse and chop all the veggies. 
     
  2. Once the moong sprouts are ready rinse them in water.Then steam or boil the sprouts until half cooked for a crunchy taste.Strain the cooked sprouts.
  3. Mix all the veggies and steamed sprouts well; except salt and lemon juice
  4. Add coriander cilantro sauce (pudina hara dhaniya chutney) - optional
    Lastly season with salt, black pepper and add a few drops of lemon juice as per taste.
  5. Garnish with a slice of lemon or thinly sliced carrot.
  6. Serve Moong Sprout Salad immediately.
There are many possible variation of moong sprouts salad. I usually make this salad with assorted vegetables.

INGREDIENTS (measuring cup used, 1 cup=240 ml)
  • 1 cup sprouted moong beans
  • 1½ cup chopped baby spinach
  • ½ cup carrot, finely chopped
  • ½ cup cucumber, finely chopped
  • ½ cup tomato, finely chopped
  • ½ cup cabbage, chopped in ling thin strips
  • ¼ tsp rock salt/black salt
  • ¼ tsp red chili powder
  • ½ tsp chaat masala
  • 1 tsp lemon juice or as required.
DIRECTION
  1. First you have to sprout the moong beans.
  2. Once the moong sprouts are ready rinse them in water.
  3. Then either steam it or boil it until half cooked for a crunchy taste.
  4. Strain the cooked sprouts.
  5. Mix all the ingredients listed above except salt and lemon juice.
  6. Lastly season with salt and add a few drops of lemon juice as per taste. Garnish with a slice of lemon. Serve moong sprouts salad immediately. 
NOTES
You can make the sprout moong salad the way you like:
  • You can add cubed boiled potatoes and chopped onion in addition to other veggies. Potatoes can be substituted with boiled sweet potato. And even boost the nutritive value of this salad by adding roasted peanuts or sesame seeds or pumpkin seeds.
  • You can give it a little twist by adding some fruits of your choice like pomegranate; mango or even orange will go very well.
