Vegetarian Quesadilla Recipe

A Quesadilla is a flour tortilla or a corn tortilla with savory mixture containing cheese and/or vegetables and other ingredients. Quesadilla are fast, crispy, gooey and has an ultimate flavor.

This popular food was first introduced in the Mexican culture. The stuffing that constitutes a quesadilla varies from region to region, between U.S and Mexico and is not universally agreed upon. But there are certain similarities between the different versions that people generally agree upon, namely that the quesadilla is cooked after being filled or stuffed. A Quesadilla is a toasted tortilla with melted cheese inside as “Queso” is cheese in Spanish.

I make tortillas at home. It is really easy and you can make it ahead of time. I have shared the recipe of tortillas on this blog. You can also buy it from stores if you are out of time or you can simply use roti (flat Indian bread) instead.

Vegetarian Quesadilla makes an easy and delicious breakfast, snack, lunch, appetizer or even brunch. These are tortilla bites filled with goodness of veggies and cheese.  Now with these easy steps you can make Quesadilla in no time.

Step by step Vegetarian Quesadilla recipe below:
  1. Heat oil in a pan. Add onion and fry till translucent.
  2. Add green chili and garlic paste. To make the paste, take 1 chopped green chili and 1-2 small garlic clove, crush it well in a mortal-pestle or in a grinder. Fry for 5 seconds.
  3. Add green and red bell pepper. Sauté it for a minute.
  4. Add chopped mushrooms. Stir it and cook more for a minute.
  5. Add corn kernels and mix well.
  6. Lastly season with salt black pepper and mix well.Turn off the heat.
  7. Heat a griddle or a skillet over medium heat.
  8. Roast one side of tortilla on a skillet till it gets light golden color.
  9. Lower down the heat, flip the tortilla.
  10. Spread about 2-3 tbsp of vegetable mixture over one half of the tortilla.
  11. Add about a tbsp. of cheese on top of this vegetable mixture.
  12. Fold the tortilla into half-moon shape, covering the mixture.
  13. Melt ¼ tsp of butter over the skillet and  place the tortilla over it. Press down on the tortilla for a few seconds, allowing the cheese to melt.
  14. Flip the quesadilla to toast the other side, making sure neither of the sides gets too brown. Apply butter and toast other side until golden spots appear and the tortilla is light and crispy.
  15. Cut in half or small triangles and serve hot.

Quesadilla- a vegetarian cheesy recipe

INGREDIENTS (measuring cup used, 1 cup=240 ml)
  • 8 flour tortillas
  • 1 cup green pepper/green capsicum, chopped
  • 1 cup red pepper, chopped
  • 1 cup mushrooms, sliced
  • ½ cup corn kernels
  • ¼ cup chopped onions
  • 1 cup mozzarella cheese
  • 1 tsp green chili and garlic paste
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 2-3 tbsp. butter for toasting the tortillas

TIPS
  • An alternative cooking option for Quesadillas is to bake in oven. Heat oven to 350 F. Follow same steps as above from filling to folding. Place it on a baking tray and spray with cooking oil or brush it with butter and bake it for 5-7 minutes or until cheese melts. But don’t dry out tortillas.
  • The filling of the quesadillas can be anything of your choice. You can add eggplant/brinjal, zucchini, olives, green onion, and cabbage.
  • Use spinach if you don’t want to add mushrooms or if you are allergic to it. It will taste similar.
  • You can also use whole wheat tortillas instead of flour tortilla.
  • Cheese can be omitted or reduced if desired and it will taste just as great.
SERVING SUGGESTION
Serve quesadilla hot with salsa or sour cream and guacamole.
