Boondi

Boondi raita is one of the
raitas which is made often in my home. Boondi are tiny fried gram flour balls. Boondi
is very easy to make at home or you can buy it at most grocery or sweets shop.
Here
we need salted boondi. Unsalted
boondi are used to make boondi ladoo. Boondi are often served with chaat
recipes and jaljeera or mixed in the pani of the pani puri.
Boondi
raita is very easy to make. You can serve it with any north indian dish. But
mostly it goes well with rice dishes like pulao, biryani or parathas.
Step by step boondi
raita recipe:
- First warm water in a pan on stove or in microwave
- Add booondi in the warm water and let them soak for 10 minutes.
- Meanwhile, Whisk the yogurt till smooth.
- Drain the water from soaked boondi.
- Lightly press the boondi in your palms, to squeeze the water out of it. Care should be taken that the boondi should not get mashed.Add the boondi and mix.
- Add all the dry spice powders and salt.
- Add chopped coriander leaves.Stir well.
- The boondi raita can be served cold or at room temperature. You can also garnish boondi raita with sprigs of mint or coriander leaves.

If the
yogurt is thick, you can add some water to it when you wisk it to make a
slightly thin consistency.
