Quick Veg Pulao Recipe, How to make Veg Pulao in pressure cooker

Easy veg pualo cooked  in pressure cooker with step by step photos. 
Here I am sharing the way I make veg pulao at home. I sometimes make pulao in a pressure cooker using this recipe or sometimes in a pot. When I don’t have time to do elaborate cooking, I use pressure cooker for pulao.

This a good option to make pulao when you have cook food on a short notice or in a quick time. One thing needs to be taken care of is, different types of rice will cook at different timings. Since I use the same brand of basmati rice, I know how much time the grains take to cook. It is always better to soak the rice first. The proportion I use for rice to water is 1:2.

While cooking the pulao, after adding the drained rice, stir it with rest of the ingredients well, so that the oil coats each rice grain. I usually pressure cook on a high flame for 2 whistles. Let the pressure inside the cooker drop, as the rice needs some standing time, when the cooking process is still on. Then I gently fluff the rice before serving.

In this recipe I have added the vegetables available at home like green peas, carrots, french beans, potatoes and onions. You can add veggies of your choice to the pulao like mushrooms, capsicum /bell pepper and even tomatoes.    

Step by step quick veg pulao recipe below:
  1. Rinse the basmati rice and soak the rice for 20-30 minutes.
  2. Meanwhile, you can chop all the vegies. Then heat 2 tbsp. of oil/ghee in a cooker and add the whole spices- cumin seeds, tej patta, cinamom stick, clove, green cardamom, whole black pepper. Saute it for few seconds till the spices become aromatic.
  3. Add ¼ cup chopped onion, stir and saute on a low flame till the onion become golden.
  4. Then add ginger + garlic + green chili paste. Stir and saute till the raw aroma of the ginger garlic goes away. About 15 seconds.
  5. Then add all the chopped veggies and saute for 2-3 minutes on a low flame.
  6. Add the spice powders- turmeric, red chili and garam masala. Mix well with all the veggies.
  7. Drain water from the soaked basmati rice after 30 minutes.
  8. Add drained basmati rice in the pressure cooker.
  9. Saute gently for 2-3 minutes till the oil/ghee has coated the rice grains evenly.
  10. Pour about 2 cups of water and salt. Stir the veg pulao very gently.
  11. Cover the lid and pressure cook the veg pulo for 2-3 whistles on a medium to high flame. 2 whistles will make the pulao fluffy and nice. If you like it softer in texture then cook till 3 whistles.
  12. When the pressure cooker settles down, remove the lid and gently fluff the rice.
  13. Serve the veg pulo garnished with fried onions, cashews and mint or coriander leaves. Veg pulao goes well with a raita like boondi raita, plain raita or mix veg raita. Even a side thin curry or kadhi or spiced butter milk or chaas goes well.
  14. You have a comforting meal ready.

Quick veg pulao recipe in pressure cooker

INGREDIENTS (measuring cup used, 1 cup=240 ml)
For pulao:
  • 1 cup basmati rice
  • ¼ cup chopped potato, chopped into cubes
  • ¼ cup carrots, thinly slices
  • ¼ cup cauliflower, small florets
  • ¼ cup peas/ matar, fresh or frozen
  • ¼ cup french beans, chopped
  • ¼ cup onions, finely chopped or thinly sliced
  • ½ tsp turmeric powder/haldi
  • ½ tsp red chili powder/lal mirch
  • ¼ tsp garam masala
  • ½ tsp salt or as per taste
  • 2 cup water
  • 1.5 or 2 tbsp oil/ghee

Crushed or ground into paste in a grinder
  • ½ inch ginger/adrak, roughly chopped
  • 1 green chili, roughly chopped
  • 1-2 medium garlic cloves/lehsun

Whole spices or garam masala:
  • 1 tsp cumin seeds/jeera
  • 1 medium sized indian bay leaf/tej patta
  • 1 inch chinamon stick/dal chini
  • 1-2 green cardamom/elaichi
  • 2-3 cloves/lavang
  • 2-3 whole black pepper/sabut kali mirch

DIRECTION:
  1. Rinse the basmati rice till the water runs clear of starch
  2. Soak the rice for 20-30 minutes, drain and keep it aside.
  3. Take 2 tbsp oil/ghee in a pressure cooker. Once hot the whole spices ans saute it for few seconds till the spices become aromatic
  4. Add chopped onion, stir and saute on a low flame till the onion become golden.
  5. Then add ginger + garlic + green chili paste. Stir and saute till the raw aroma of the ginger garlic goes away. About 15 seconds.
  6. Add all the chopped veggies including peas.
  7. Add the spice powders- turmeric, red chilli and garam masala. Saute the veggies for 2-3 minutes on a low flame.
  8. Add drained basmati rice. Saute gently for 2-3 minutes till the oil/ghee has coated the rice grains evenly.
  9. Pour about 2 cups of water and salt. Stir the veg pulao very gently.
  10. Check the taste of the stock, if it tastes bland, then add some more salt.
  11. Cover the pressure cooker tightly with its lid.
  12. Pressure cook the veg pulo for 2-3 whistle on a medium to high flame. 2 whistles will make the pulao fluffy and nice. If you like it softer in texture then cook till 3 whistles.
  13. When the pressure cooker settles down, remove the lid and gently fluff the rice.
  14. Serve the veg pulao garnished with fried onions, cashews and mint or coriander leaves.

SERVING SUGGESTION
This quick veg pulao goes well with boondi raita, plain raita or some slices of onion and a mix veg raita or pickle and papad.
