Eggless Vanilla Cake Recipe, How to make Vanilla cake

Eggless Vanilla cake recipe with step by step photos

This basic eggless vanilla cake is soft and moist. It is simple to bake and uses readily available ingredients. I learnt it from my mom, which she loved making it every time I ask her, since my childhood.
This recipe requires milk powder which is easier to use than other egg replacement.

The original recipe requires malai instead of butter. Malai is an Indian cooking ingredient made by heating non homogenized whole milk to about 180 degree F. and then allowing it to cool. A thick yellowish layer of milk forms on the surface of milk. If you are using malai then do read notes*. I have modified mom’s recipe a bit as malai is not available here. Do try this cake to get that perfect taste.

Here I have made a thin chocolate glaze for the cake. Preparing the glaze is entirely optional. The texture of this cake is soft and moist. Kids really enjoy eating it!!!

Step by step Eggless Vanilla recipe:
  1. Mix 1½ cup all-purpose flour, ¼ tsp baking soda and ¾ tsp baking powder and sieve it twice, so that it combines uniformly and keep it aside.
  2. Sift 1 cup milk powder separately and keep it aside.
  3. Preheat the oven for 10-12 min.
  4. Now in a mixing bowl, take 1 cup butter which should be at room temperature.
  5. Add sugar and beat until light and fluffy.
  6. Then add milk powder and mix.
  7. Now add 1 cup milk and ¼ tsp essence and blend well.
  8. Add the all-purpose flour mixture to the blended wet ones little at a time. Fold it well.
  9. If required add more milk to reach dropping consistency.
  10. Pour the cake batter into a greased and dusted cake pan.
  11. Bake it in a pre-heated oven at 180 degree C/356 degree for 40 minute or till a toothpick inserted come out clean. The temperatures in the ovens differ, so do keep a check while baking. You oven might bake the cake in 30 minute or 45 minute. The final check is that the toothpick should come out dry or with fine crumb particles. There should be not sticky batter on the toothpick. Use the same temperature for baking in the convection mode of a microwave oven.
  12. Let the cake cool on wired rack. You can serve the eggless vanilla cake plain or dusted with icing sugar, cocoa powder or prepare any chocolate icing.
  13. To prepare the chocolate glaze, take 3 tbsp. cocoa powder, 2 tbsp. milk, 2 to 2.5 tbsp. sugar, ½ tbsp. butter in a small pan or sauce pan. Add more milk if required. Mix everything and keep the pan on low flame on the stove top.
  14. Stir till the mixture thickens a bit. The sugar should be dissolved completely.
  15. Add some raisins and chopped nuts of your choice and mix well. Turn off the heat. 
  16. When the glaze is still warm spread it on the cake with a small spatula.
  17. You can also slice the cake horizontally, then spread the glaze on base slice. Cover with the top slice and then spread the glaze on the top.
  18. Allow the glaze to cool before serving the vanilla cake.

INGREDIENTS (measuring cup used, 1 cup=240 ml)
For vanilla cake-
  • 1½ cup all-purpose flour/maida
  • 1 cup milk powder/dried milk
  • ¾ cup castor sugar (use 1 cup, if you don’t prefer sugar on lesser side)
  • ¾ cup unsalted butter
  • 1 cup milk (full fat)
  • ¼ tsp baking soda
  • ¾ tsp baking powder
  • ¼ tsp vanilla extract 
For Chocolate glaze-
  • 3 tbsp. cocoa powder
  • 2 tbsp. milk
  • 2 to 2.5 tbsp. sugar or add as required
  • ½ tbsp. butter 
DIRECTIONS 
Preparing Vanilla cake:
  1. Mix all-purpose flour, baking soda and baking powder and sieve it twice, so that it combines uniformly and keep it aside.

  2. Add milk, sugar and butter in a small pan or sauce pan.
  3. Mix everything and keep the pan on a low flame on stove top.
  4. Stir till the mixture thickens a bit. Add more milk if required The sugar should be dissolved completely.
  5. Add some raisins and chopped nuts of your choice and mix well. Turn off the heat.
  6. When the glaze is still warm spread it on the cake with a small spatula.
  7. You can also slice the cake horizontally, then spread the glaze on base slice. Cover with the top slice and then spread the glaze on the top.
  8. Allow the glaze to cool before serving the vanilla cake.
NOTES
  • For best results in cake baking, let all the ingredients reach room temperature; especially butter and milk.
  • If you are using malai, then replace butter with 1 cup malai. The quantily of milk will also be lesser. It varies according to the consistency of the malai. So add little at a time until required consistency is reached. 
SERVING SUGGESTION
Serve eggless vanilla as a dessert or a snack.
