Bread Pakora Recipe, How to make Bread Pakora with stuffed potato

I recollect the moments in my life during heavy rains, when my mom would make different types of pakoras. Sometimes onion pakora, someday moong pakoras, on some occasion mix veg pakora and the list goes on.., on the days when it rained and rained and rained…I and my siblings would relish it so much. J
Its pouring outside…I often make bread pakora when its dark, cold and pouring outside. It’s a snack loved especially during rains.
Bread pakora is a favorite breakfast and tea time snack at our home. The stuffed bread pakora served hot with chutneys accompanied by a cup of Indian masala chai. What more could I ask for?

Bread pakoras can be made in two different types: Plain bread pakora and stuffed bread pakora. When I have to make some hot snack quickly, I make plain bread pakora. Another similar recipe is bread rolls with stuffed potatoes.

The filling of stuffed bread pakora is made with potatoes; but you can innovatively make various filling made with paneer, green peas, or even cheese. 

Step by step bread pakora recipe:
Potato filling-
  1. Take 3-4 medium sized boiled potatoes. Peel and mash the potatoes when they are still warm.
  2. In a pan take oil, heat it. Add ¼ tsp jeera and 1 green chili, finely chopped and grated ginger. Fry it just for 30 seconds.
  3. Add ¼ tsp turmeric powder and ¼ tsp red chili powder.
  4. Add the mashed potatoes and salt as required. Combine them well.
  5. Lastly garnish with 2 tbsp. chopped coriander leaves and mix. Turn off the stove.

Besan batter and making pakora-
  1. In a bowl, take the besan (chick pea flour/ gram flour). Add red chili powder, turmeric powder, asafoetida, ajwain and salt.
  2. Add around 1 cup of water and mix. The batter should not be very thick or too thin. Check the seasoning and adjust accordingly. Add a few drops of oil to the batter and mix well.
  3. Keep a slice of bread on your rolling board or cutting board. Take 2 teaspoonful mashed potato mixture and apply it on the bread evenly.
  4. Cover this potato stuffed slice with another slice. If you want you can pour some tomato sauce or mint coriander chutney or sweet chaat chutney over the potato mixture. I choose to keep it plain. Slightly press the sandwich and slice into desired shape. I made triangular slices.
  5. Take the entire sandwich in your hand and dip it in the besan batter.
  6. Coat the stuffed bread sandwich evenly with the besan batter. Gently slide the besan batter coated bread sandwich in the oil.
  7. Fry the bread pakoras on a medium flame till they are crisp and golden brown. Served them hot with your favorite dip.

Bread pakora- Indian snack made with potato stuffed bread slices and a crisp outer coating.

INGREDIENTS (measuring cup used, 1 cup=237 ml)
For stuffing/ filling-
  • 3-4 medium sized boiled potatoes
  • 1 green chili, finely chopped
  • 1 inch ginger, grated
  • ¼ tsp cumin seeds/jeera
  • ¼ tsp turmeric powder/haldi
  • ¼ tsp red chili powder
  • 2 tsp oil
  • Salt to taste
  • 2 tbsp. coriander leaves/ cilantro, chopped
For outer crisp coating-
  • 1½ cups besan (gram flour/ chickpea flour)
  • 1/8 tsp turmeric powder/haldi
  • ½ tsp red chili powder
  • ¼ tsp garam masala (optional)
  • ¼ tsp carom seeds/ ajwain
  • ½ Salt to taste
  • 1 cup Water
  • 6 slices of bread (white or brown)
  • Oil for frying
DIRECTION
Potato filling-
  1. Peel the boiled potatoes. Mash the potatoes when they are still warm.
  2. In a pan take oil, heat it. Add jeera and 1 green chili, finely chopped.
  3. Reduce the flame to low, add grated ginger and fry it just for 30 seconds.
  4. Add turmeric powder and red chili powder.
  5. Add the mashed potatoes and salt. Combine them well.
  6. Lastly garnish with chopped coriander leaves and mix. Turn off the stove.
Besan batter and making pakora-
  1. In a bowl, take the besan (chick pea flour/ gram flour)
  2. Add red chili powder, turmeric powder, asafoetida, ajwain and salt.
  3. Add around 1 cup of water and mix. The batter should not be very thick nor too thin. Check the seasoning and adjust accordingly.
  4. Add a few drops of oil to the batter and mix well.
  5. Keep the ready batter aside.
  6. Now you need to assemble and fry the bread pakora.
  7. Before you do the following steps, heat up some oil for deep frying the pakoras.
  8. Keep a slice of bread on your tray or rolling board or cutting board. Take 2 teaspoonful mashed potato mixture and apply it on the bread evenly.
  9. Cover this potato stuffed slice with another slice. If you want you can pour some tomato sauce or mint coriander chutney or sweet chaat chutney over the potato mixture. I choose to keep it plain.
  10. Slightly press the sandwich.
  11. On to your cutting board, slice the bread into triangle or rectangle slices. I made triangular slices.
  12. Take the entire sandwich in your hand and dip it in the besan batter.
  13. Coat the stuffed bread sandwich evenly with the besan batter. Be gentle with the pakoras. By now, the oil is hot and you can easily slide the besan batter coated bread sandwich in the oil.
  14. Fry the bread pakoras on a medium flame till they are crisp and golden brown.
  15. Drain on a tissue.
  16. Enjoy the bread pakodas in the rains with a cup of Indian masala or ginger Chai. J
SERVING SUGGESTION
Serve them hot or warm with tomato sauce or with any chutney of your choice.
I have served them with tomato sauce and coriander mint chutney.
