Caramelized Sweet Potato

After a hot and spicy post it’s time for something sweet; and not just regular dessert, but something that can be consumed even when fasting. Normally sweet potato which is also known as sakarkand or ratala is associated with fasting food. What many people don’t know is that, this sweet potato can also be used to make an extremely simple dessert.

This sweet dish is called as ‘Ratalyache Kaap’ in Marathi. Even if it is a fasting recipe, that does not mean that it cannot be made on other days J.

Step by step caramelized sweet potato recipe:
  1. Wash and clean the sweet potato thoroughly. Do not peel the skin off, and cut the sweet potato into round slices.
  2. Now, in a pan, heat the ghee.
  3. Add in the sweet potato slices and stir till all the slices are coated with ghee.
  4. Cover the pan and let them cook on medium heat. Keep stirring in between.
  5. Once the slices are cooked, add sugar and mix together.
  6. Let the sugar melt down and coat the slices. Make sure you do it on low to medium heat otherwise; you will end up with a burnt dish.
  7. The slices will get little caramelized and turn dark brown.
  8. Once all the sugar is melted and most of the moisture is evaporated, turn off the heat.

Sweet potatoes - A simple sweet dish had during fasting

INGREDIENTS (measuring cup used, 1 cup=237 ml)
  • 2 medium sized ratala / sweet potato
  • 2 tbsp. ghee – I know it’s a lot, but this is crucial for the dish J
  • 3-4 tbsp. sugar
DIRECTION
