Sweet Corn patties/tikki, How to make Corn Cutlets

Sweet corn is readily available now a days. You can make a variety of recipes with it. To make this corn patties recipe I have used American sweet corn kernels.
Sweet corn tikki or cutlets can be served as evening snack with tea. You can relish sweet corn tikki hot on a rainy evening.  

Step by step Sweet Corn patties recipe:
  1. Coarsely grind 1 cup sweet corn kernels. Do not grind it much, as it will turn watery.
  2. Peal the boiled potatoes and mash or grate them.
  3. In a bowl, add the sweet corn, 1 cup grated/ mashed potatoes, ginger and green chili paste, green coriander and ½ tsp roasted cumin powder. Mix it.
  4. Then add in ½ cup bread crumbs and salt. Mix everything well. If you feel that the mixture is very moist, then you can add more potato or bread crumbs.
  5. Take some mixture in your hand and give it round or oval shape. Similarly make the remaining cutlets. Preheat a skillet.
  6. Pour 2 tsp oil on the hot pan. Place the cutlets on skillet. When the lower side turns brown flip the cutlets over.
  7. Fry the cutlets till they turn brown on both sides too.
  8. Serve hot and enjoy J

Sweet Corn tikki is a shallow fried cutlet which can be had as a snack

SERVES: 8-10 small cutlets

INGREDIENTS (measuring cup used, 1 cup=240 ml)
  • 1 cup sweet corn kernels
  • 2 medium sized potatoes, boiled
  • ½ cup bread crumbs
  • ½ cup bell pepper, finely chopped (optional)
  • 1 inch piece ginger, grated
  • 1 green chili, finely chopped
  • 2-3 tbsp. coriander leaves, finely chopped
  • ¼ tsp black pepper powder
  • ½ tsp roasted cumin (jeera) powder
  • Salt to taste
  • 2-3 tbsp. oil
DIRECTION

TIPS
You can fry this tikki in two different ways. I have shared the method of shallow frying it.
If you want to deep fry the cutlets, add 1 tbsp rice flour to the mixture. Fry the cutlets by turning them over from time to time till they turn brown.

SERVING SUGGESTION
Serve hot sweet corn cutlets with tomato sauce or green coriander chutney.
