Mushroom Masala Recipe, how to make Mushroom masala

Here is an easy and quick recipe of mushroom masala. I had made this recipe for lunch and everybody liked it.

The most amazing thing about this recipe is that, it is not an elaborate or complicated recipe. Easy for beginner level.
Mushroom masala is a dry dish and excellent combination to be served with roti or chapatti and even as a side with dal and rice.

You can add in any veggies of your choice to this recipe. I have added bell pepper and onions. 

Step by step mushroom masala recipe:
  1. Heat oil in a pan or wok. Add cumin seeds, dry red chili, bay leaf and pepper corns. Sauté for a few seconds till red chili is roasted and a cumin seed starts to splutter.
  2. Add chopped onion and little salt and sauté till they are translucent.
  3. Add chopped garlic and ginger and sauté it.
  4. Now add chopped tomatoes. Mix them well and cook till tomatoes are mushy.
  5. Add red chili powder, coriander powder and turmeric powder and mix well.
  6. Now add mushrooms and capsicum and mix well.
  7. Cover and cook till mushrooms become soft.
  8. When mushrooms are soft enough add garam masala and crushed kasuri methi. 
  9. Sauté and lastly add chopped coriander leaves.
  10. switch off the heat. Mushroom masala is ready to be served.
  11. Serve hot with paratha or roti.

Sauteed mushroom with Indian spices and bell pepper

INGREDIENTS (measuring cup used, 1 cup=237 ml)
  • ½ lb. Mushrooms
  • 1 medium sized capsicum, chopped
  • 1 medium sized onion, chopped
  • 1 tomato, chopped
  • 1 inch ginger, grated
  • 1-2 clove of garlic, finely chopped
  • 1-2 dry red chilies
  • 1 bay leaf
  • 3-4 peppercorns
  • ½ tsp cumin seeds
  • ¼ tsp turmeric powder
  • ½ tsp redchili powder
  • 1 tsp coriander powder
  • ¼ tsp garam masala
  • ½ tbsp. Dry fenugreek leaves/kasuri methi
  • 1 tbsp. cilantro/chopped coriander leaves
  • 2 tbsp. oil 
DIRECTION
  1. Wash the mushrooms and wipe them dry with a kitchen napkin. Cut them in two.
