Fruit custard recipe

Fruit custard is a simple tasty and relatively healthy dessert. ‘Fruit custard’ or ‘fruit salad with custard’ is a delicious dessert with creamy texture of the custard and crunch of the fruits in between.

It is a kid friendly recipe, since you can hide lots of fruits and make them eat. It is one of those desserts that I have grown up having.  Along with gajar ka halwa, fruit custard used to take a prime position in the desserts mom would make. 

As one can prepare this fruit custard ahead, you can make this dessert even for get-together or parties for a large crowd. To serve it differently, you can top it with some vanilla icecream or whipped cream. I will soon share the recipe of Fruit salad (without custard) also called as fruit chaat.

Basically you use any fruits to make fruit custard but make sure you use fruits like bananas, apples, citrus fruits like orange or mosambi, pomegranate, strawberry or grapes as base. During mango season do not miss adding mangoes, they elevates the taste of fruit custard to a different level. You can even add chikoo and tinned pine apple (not raw) if you like.
I would definitely suggest you to avoid fruits like watermelon, musk melon, pear and papaya in the fruit custard as the taste and texture of these fruits does not suit it in my opinion, but if you like those fruits you can add, no hard rules!

For vegans and lactose intolerant kids or adults, this fruit custard made with almond milk is an awesome dessert.
Instead of whole dairy milk, almond milk can be used with perfect results. The method of making the custard remains the same.

Step by step recipe of Fruit custard:
Take half liter milk in a thick bottom pan or pot and bring it to boil.

Take ¼ cup of cold or warm milk in a bowl and mix 2 tbsp custard powder nicely.

Remove the milk from the flame and add the custard paste to the hot milk.
Once it is mixed well, keep the milk vessel on low flame and keep stirring till the milk begins to thicken. It will take just 2 minutes.

Add the sugar and stir continuously to avoid forming lumps in the custard.
When the sugar is completely dissolved, switch off the flame and allow it to cool.

Cool the custard completely and refrigerate it until its usage. Custard would become fairly thick once it cools down.

Chop the fruits, starting with the orange, pomegranate and grapes. Now proceed with cutting other fruits like mango, apples by peeling the skin and remove the seed and cut into medium size cubes.
At the end cut bananas into circles or half circles and add to the remaining fruits and mix nicely.

Add the chopped fruits to the cooled custard and give a good stir.

Refrigerate it for 2 hrs.
Serve it cold.

Mixed fruit with custard

INGREDIENTS (measuring cup used, 1 cup=237 ml)
  • 2.5 cups Whole milk / Almond milk (approx. 500 ml)
  • 2 tbsp eggless custard powder (I used vanilla flavor)
  • ¼ cup sugar
  • ¼ cup milk cold or warm
  • Fruits needed-
  • 2 to 3 medium to large bananas
  • 1-2 apples
  • 1 orange/sweet lime
  • 1 pomegranate
  • ½ cup seedless grapes
  • 1 ripe mango (in season) 
DIRECTION
  1. Boil 500 ml milk in a thick bottom pan or pot.
  2. Meanwhile, mix custard powder with ¼ cup of milk nicely and make a smooth paste. Make sure there are no lumps. Keep it aside.
  3. Remove the milk from the flame and add the custard paste to the hot milk.
  4. Once it is mixed well, keep the milk vessel on low flame and keep stirring till the milk begins to thicken. It will take just 2 minutes.
  5. Add the sugar and stir continuously to avoid forming lumps in the custard.
  6. When the sugar is completely dissolved, switch off the flame and allow it to cool.
  7. Don’t cook more, as it will stick to the pan and become thicker. 
  8. Cool the custard completely and refrigerate it until its usage. Custard would become fairly thick once it cools down.
  9. Chop the fruits, starting with the citrus varieties like orange or sweet lime, pomegranate and grapes. Now proceed with cutting other fruits like mango, apples by peeling the skin and remove the seed and cut into medium size cubes.
  10. At the end cut bananas into circles or half circles and add to the remaining fruits and mix nicely.
  11. Add the chopped fruits to the cooled custard and give a good stir.
  12. Refrigerate it for 2 hrs. Serve cold. 
NOTES
  • If you are using almond milk, do not boil it, just warm it. Add custard paste to the warmed almond milk. Then follow the remaining steps.
  • Cut the fruits like orange/mosambi, grapes, pomegranate, strawberry and then chop banana and apple at last so that the later once do not lose their color.
  • If you mix the fruits with custard much ahead there ae chances that it might get watery, so plan in such a way that you mix the fruits with custard just 2-3 hrs before serving or 4-5 hrs. max. But you can prepare the vanilla custard much ahead, even a day before and keep it ready.
  • While serving if you find the fruit custard very thick you can add some milk and mix it to the consistency you need.
  • The quantity of sugar I mentioned is just right for enough sweetness, as even the fruits lend their own sweetness when we bite. If you want it more sweeter you can add more sugar.
  • If you want to make it rich you can add nuts like cashewnuts and almonds. It adds a nice bite to fruit custard.
